Quick question, just to make sure I'm doing it right since I've never used these before.

Do the overalls sometimes drastically change? I just did Apollo and his overall is now a 54?

Yes.
Pay no attention to the overalls anymore; even though they seem so drastically different after inputting the new values.

On the Wrestler selection screen before starting, there is a button prompt, Triange I believe PS4 (says Match Options)

Hypothetically if I wanted to tweak wrestlers attributes to imitate them improving or declining due to age/injuries what would be a good way to go about doing this?

I like to update the rosters after Mania so that it freshens things up and there is some sort of peak and trough to the wrestlers careers.
