Why doesn't great grappler care about denying transitions, because they can work from anywhere?

Do you know of any way to avoid getting a reversal? Sometimes I want to deny a transition to set up a sub and accidently reverse it and end up in dominant full guard. I feel like I have to start all over again when that happens. Gross.
