As Ben pointed out;

Location:

C:\Program Files (x86)\Steam\steamapps\common\Front Office Football Nine\default_data

Modify:

default_teams.csv
teams_info.csv

When you start a new universe you will get the updated names.

In team_info.csv you have all your stadium information.
In default_teams.csv you have your color scheme information.
